The recipes in this collection are from Christine Yerbic’s «Cooking in Mexico» section in the Pacific Pearl Magazine. Christine studied at culinary institutes in the USA, Mexico, France, and Madame Foiada’s Culinary Academy in Switzerland. She identified as a «foodie» who had over 25 years of professional experience in the food service sector. Since her first trip to Mexico in 1962, she made it her mission to learn everything she could about cooking in this country. For 25 years, she imparted her culinary expertise to readers of the Pacific Pearl. In 2010, Christine’s companion cookbook, also titled «Cooking in Mexico», was published by the Pacific Pearl.
